Keeping Korean Fried Chicken Crisp for Takeout

Steam is the main enemy of fried-chicken crispness. Even excellent chicken softens when sealed hot in an airtight container or covered in sauce for a long trip.

Choose the right format

Plain fried or sauce-on-the-side usually travels better than heavily glazed chicken. Bone-in pieces often retain heat differently from small boneless bites.

Packaging matters

Vented boxes release steam. Closed plastic containers trap moisture. Keep cold pickled radish and salads separate from hot chicken.

Order timing matters

Pick up as close to serving time as possible. If the restaurant is far away, plan to reheat rather than expecting delivery texture to match fresh service.

Reheat with dry heat

An oven or air fryer can restore some crispness. Avoid reheating in a sealed microwave container. Reheat chicken to at least 74°C when appropriate and check the thickest piece.
