Understanding Spice and Sweetness Levels

Red colour does not reliably predict heat. Gochujang can provide fermented depth and sweetness as well as chile flavour, while fresh or powdered chiles may create sharper heat.

Ask what the scale means

A restaurant’s “medium” may be mild to one diner and very hot to another. Ask whether the sauce is sweet-spicy, chile-forward, or made with added hot pepper.

Sweetness changes perception

Sugar, syrup, fruit, and ketchup can soften perceived heat but make a glaze feel heavy. Acidity, garlic, and savoury ingredients help create balance.

Sauce-on-side is useful

When uncertain, order sauce separately or choose half-and-half. Taste a small amount before coating every piece.

Build heat gradually at home

Add concentrated chile ingredients in small steps. It is easy to add more heat but difficult to remove it from a finished sauce.
