Saucing and Glazing Korean Chicken

A good sauce forms a thin, even layer that supports the chicken. Too much liquid destroys crispness; too much reduction creates a sticky candy shell.

Reduce to coating consistency

Simmer a clean sauce until it lightly coats a spoon. It should still spread across hot chicken without forming ropes.

Warm sauce and hot chicken

Tossing warm sauce with freshly cooked chicken helps create an even layer. Cold sauce can cool the food and pool in the bowl.

Use the smallest effective amount

Start with less sauce and add more only when needed. A properly seasoned chicken should not require a puddle.

Never use raw marinade directly

Any liquid that contacted raw poultry must be discarded or handled under a tested safe process. The simplest method is reserving clean sauce before marinating.
