Korean Chicken for Picnics and Outdoor Meals
Outdoor meals create two competing goals: preserving texture and controlling temperature. Food safety takes priority over keeping chicken perfectly crisp.
Choose travel-friendly food
Plain fried chicken, sauce-on-side, grilled pieces, rice balls, and sturdy pickles generally travel better than heavily sauced chicken and delicate salads.
Use separate insulated containers
Keep hot food hot and cold food cold. Do not place warm chicken beside cold mayonnaise-based sides in one uninsulated bag.
Bring clean serving tools
Pack tongs, napkins, hand-cleaning supplies, waste bags, and covered containers. Avoid direct hand contact with shared food.
Watch the clock
Perishable food should not remain at room temperature for more than two hours, and less time may be appropriate in hot weather. When uncertain, discard it.
