Oven and Broiler Korean Chicken
An oven cannot reproduce charcoal smoke, but it provides reliable heat and works well for thighs, drumsticks, wings, and sheet-pan dakgalbi.
Use a rack when helpful
A wire rack over a lined tray allows air to circulate around wings and pieces. For saucy sheet-pan dishes, cook directly in a shallow pan.
Control sauce thickness
Thick sugary sauce can burn on the pan before the chicken is done. Use a lighter coating for most of the bake and add clean glaze later.
Broil for colour
A short broil can create browning, but stay beside the oven. Garlic, sugar, and gochujang can move from caramelized to burnt quickly.
Check temperature, not colour
Red marinade can make visual doneness difficult to judge. Use a thermometer and reach 74°C in the thickest part.
