Korean Chicken Marinade Basics
A marinade seasons the surface and can influence browning, but it does not penetrate deeply in a few minutes or make unsafe chicken safe. Balance salt, sweetness, aromatics, and heat for the cooking method.
Start with a savoury base
Soy sauce, salt, doenjang, or another salty ingredient establishes seasoning. Measure carefully because multiple prepared sauces can compound sodium.
Add aromatics and sweetness
Garlic, ginger, green onion, black pepper, fruit, sugar, honey, or syrup can add complexity. Sweet ingredients accelerate browning and burning over direct heat.
Use gochujang thoughtfully
Gochujang contributes fermented flavour, salt, sweetness, and chile. It is not only a heat source. Thin it with other ingredients instead of coating chicken in a thick layer.
Marinate safely
Keep chicken refrigerated, use a clean non-reactive container, and discard marinade that touched raw chicken unless it is brought to a safe boil in a separate process. Never use raw marinade as a finishing sauce.
