Korean Chicken Wings
Wings offer high skin-to-meat ratio and carry sauce well. Their small size also makes overcooking and inconsistent batches easy.
Separate or leave whole
Split flats and drumettes cook more evenly and are easier to serve. Whole wings can be attractive but take more space and may cook less uniformly.
Dry before cooking
Surface moisture interferes with crispness. Pat wings dry and refrigerate uncovered only when a trusted recipe and food-safety practice support it.
Choose one or two finishes
Plain, soy-garlic, and spicy yangnyeom make a useful mixed platter. Too many sauces complicate timing and can create waste.
Check representative pieces
Test several of the largest wings for 74°C. Small pieces can finish before larger drumettes.
