Korean Chicken Menu Terms Explained
Menu spellings vary because Korean words can be romanized in several ways. Use the terms as clues, then read the restaurant’s own description.
Fried-chicken terms
Huraideu generally means plain fried chicken. Yangnyeom means seasoned and often refers to sauced chicken. Ganjang means soy sauce. Padak commonly means chicken with green onions.
Other crisp chicken
Dakgangjeong is usually bite-sized fried chicken coated in a sticky glaze. It may be boneless or include small bones depending on the operator.
Grilled and griddled terms
Dak means chicken. Bulgogi refers to marinated grilled-style meat. Dakgalbi may mean spicy griddle chicken or charcoal-grilled chicken. Sutbul means charcoal fire.
Ask instead of guessing
Words do not guarantee one standard recipe. Ask whether the dish is fried, grilled, bone-in, boneless, spicy, sweet, or served with vegetables.
