How to Evaluate a Korean Chicken Restaurant

The best restaurant for one diner may not be the best for another, but consistent execution can still be evaluated. Judge fried and grilled items by different standards.

For fried chicken

Look for a crisp coating, properly cooked meat, sauce that coats rather than pools, and packaging that lets steam escape. Plain fried pieces reveal the kitchen’s basic technique.

For grilled chicken

Look for browning without a burnt sugary exterior, juicy meat, clean smoke flavour, and a marinade that does not overwhelm the chicken.

Sides and service

Pickled radish, slaw, rice, fries, and banchan should arrive fresh and in sensible portions. Staff should explain spice, allergens, and bone-in versus boneless options.

Value is the full order

Compare actual meat quantity, cut, side inclusion, sauce, packaging, and consistency—not only the menu price. Large breaded boneless pieces are not directly comparable with bone-in wings.
