Essential Ingredients for Korean-Style Chicken
A small pantry can support many Korean-style chicken dishes. Ingredient brands vary, so taste before adding large amounts and read labels for allergens.
Gochujang and gochugaru
Gochujang is a fermented red pepper paste with salt and sweetness. Gochugaru is Korean red pepper flake or powder. They are related but not interchangeable in equal amounts.
Soy sauce and savoury bases
Soy sauce provides salt and umami. Doenjang, stock, or fish-based ingredients may appear in some recipes, but they are not required in every chicken dish.
Aromatics and finishing ingredients
Garlic, ginger, green onion, sesame oil, sesame seeds, black pepper, and vinegar create depth and contrast.
Sweeteners and fruit
Sugar, rice syrup, honey, pear, apple, or other fruit may be used. They affect browning as well as taste, so direct-fire recipes require restraint.
Quick checklist
- Read labels for wheat and sesame
- Taste concentrated ingredients
- Do not substitute blindly
- Limit sugar over direct heat
