Double-Frying and Korean Chicken Crispness
Double-frying can drive more moisture from the coating and create a brittle crust, but it is not a magic rule used by every restaurant. Coating formula, cut size, oil control, and holding time matter too.
What the first fry does
The first fry cooks much of the chicken and sets the coating. A short rest allows steam to move and the crust to firm.
What the second fry does
A hotter or shorter second fry can crisp and colour the exterior. The exact process should come from a tested recipe because cut size changes timing.
Why coatings differ
Potato starch, corn starch, wheat flour, rice flour, batters, and combinations create different crusts. Korean restaurants do not use one universal formula.
Sauce changes everything
Even a strong crust softens under a wet glaze. Toss just before serving and keep sauce separate for long travel.
