Cheolpan dakgalbi
Chicken is stir-fried on a wide iron plate with cabbage, onions, sweet potato, rice cakes, and sauce. The meal develops in stages and often ends with rice cooked in the remaining sauce.
Sutbul dakgalbi
Chicken is grilled over charcoal, usually without the large pile of vegetables. Smoke, browning, and the texture of the cut become more prominent.
How to choose
Choose griddle dakgalbi for a shared, saucy meal with vegetables and add-ins. Choose charcoal dakgalbi when you want grilled aroma and more distinct pieces of chicken.
Menu translation can blur the difference
Some English menus call both versions Korean BBQ chicken. Look for “iron plate,” “stir-fried,” “charcoal,” or “sutbul” to understand what will arrive.
