Choose boneless thigh

Thigh meat remains juicy during the staged cooking and works well with a spicy marinade. Cut pieces evenly.

Prepare vegetables by cooking time

Sweet potato and dense vegetables need thinner cuts than cabbage and green onion. Add ingredients in stages instead of piling everything in at once.

Control sauce and heat

Use enough sauce to coat and steam the ingredients, but not so much that the dish becomes soup. Stir regularly to prevent scorching.

Finish with rice thoughtfully

Stir-fried rice made in the remaining sauce is a common restaurant finish. Use cooled cooked rice safely and do not leave the pan at room temperature for an extended period.
