Choosing Chicken Cuts for Korean Recipes

The cooking method should drive the cut. Dark meat tolerates longer cooking and strong marinades, while lean breast needs tighter timing.

Thighs

Boneless thighs are reliable for dakgalbi, skewers, and grilled chicken because they stay juicy and accept marinades well. Trim large pockets of fat but do not remove every trace.

Wings and drumsticks

Wings maximize crisp skin and sauce coverage. Drumsticks are economical and easy to handle but take longer than small wings. Keep piece sizes similar.

Breast

Breast works for quick grilling, bowls, and sandwiches when cut evenly and not overcooked. Brining or a short marinade can help, but a sweet marinade does not prevent dryness.

Whole or mixed pieces

Whole birds and mixed-piece orders require different timing for breasts, thighs, and legs. Use a thermometer in multiple pieces instead of relying on one reading.
